VINEYARD:
Old vineyards in the El Pego area in Toro. The soils of this vineyard are sandy with pebbles, pre-phylloxera vineyards on bare foot.
HARVEST:
Exclusively manual, in 20 kg boxes with a rigorous selection of the grapes in the field and in the winery, using a selection table. Absolute control of the harvest start date and that the fruit is in perfect sanitary and ripening conditions.
WINEMAKING:
Fermentation takes place in a semi-truncated wooden tank, at temperatures of 22º to 24ºC for 10 days, after another 10 days of maceration, with aging in Bordeaux French oak barrels for 6 months, completed with a process of rounding off in the bottle, a minimum of one year, have resulted in this unbeatable wine from Toro.

- YEAR: 2020 Qualified as excellent, with a wide variety of nuances that add elegance to this vintage.
Tasting
- VISUAL TASTING: It has a beautiful raspberry red color, with violet hues, clean, bright and with a creamy tear.
- OLFATIVE TASTING: On the nose it reveals its floral and fruity character with fresh aromas of violet and fresh red fruits.
- TASTE IN MOUTH: On the palate it has good acidity, so its palate is fresh and very pleasant; shows a fruity character of black plums. As it opens in the glass, more mature tones appear, it reveals itself to be more sweet and the classic touches of the barrel are revealed that do not mask the fruit at all.
Pairing
Senda de los Frailes wine from Toro is a wine for tapas. Being a wine with little permanence in the barrel, the fruit stands out above all, so it would pair very well with cow and blend cheeses, not very powerful but fatty, with sausages and less fatty meats, such as poultry. Contains sulfites.
