These 50% Iberian breed acorn-fed pigs are raised to 18 and even 20 months of age. Their finishing is 6 months longer than that of Iberian pigs normally used in this category and this is what allows them to have two mast-feeding seasons. This is how they achieve this complete muscular and skeletal development; they are always in the pasture, roaming free and feeding on the extraordinary acorns of holm oaks and cork oaks.
Thus, they put on up to 70 kg in the mast-feeding season. These are the pigs used for 50% Iberian breed acorn-fed hams which are cured for a minimum of 36 months. Available in several formats.
When cut, it has an beautiful cherry red colour, unmistakable infiltration, marbling and a characteristic shine in keeping with its exceptional quality.
